My version of Rice Pudding for Breakfast (gluten and dairy free!)
I love breakfast, always have.
I get up early, have some green tea with a little coconut milk and half a teaspoon of honey from my husband Andy’s bees (love those bees, thank them for their delicious sweet beautiful honey for my tea!). After doing a bit of writing, saying my prayers and getting the dogs all set and sometimes working out first, I’m ready to eat!
Rice Pudding is one of my favorite things ever.
It’s part of what I call the “Nursery Food” category. But here’s my healthy morning version, and for me I have to make it without gluten and without dairy because my body is really sensitive to those things, and when I made peace with that this past year, everything got easier.
How To Make It For Your Sweet Self:
Cook Brown Rice with Coconut Milk – I use the kind in the carton not the can, it’s not sweetened.
Just cook the way you’d normally cook rice, substituting the coconut milk for the water. You could also use almond milk or rice milk. When all the liquid is absorbed, take it off the heat.
I like to add:
A dash of vanilla (or you can cook the rice with part of a vanilla bean..so good)
Lots of cinammon
Dash of nutmeg
A pinch of salt
Then, put some in a bowl and top with some almonds or walnuts, and some fruit if you want. I like to chop up a dried date for sweetness, or whatever fruit is around. This is so hearty and delicious and satisfying. It’s got everything you need nutritionally in terms of protein/carbs/fat and will take you through your morning feeling truly nourished and beautiful.

Breakfast is the most important meal of the day I always say. I usually skip lunch and eat little dinner. But breakfast for me is important and so does the food I cook. I'll give your recipe a try. Who know's I will like it also.
