I would go crazy if I had to make salad from scratch twice a day. All that washing and chopping and shredding. I would end up eating something easier out of a box or a bag quite honestly. Here is how I avoid doing that and how I made salad be more fast-food like and therefore more likely to end up on my plate.
I have a nice compulsive little system that when I was once talking to my friend Emma, I named “Foundational Salad”. It nourishes my need for healthy meals AND less drudgery… perfect.
Here is what I do.
Into my wooden purple salad bowl I dump lots of (already washed and spun) mesclun greens, baby spinach, TONS of radicchio (that reddish purple bitter lettuce that I am in love with), shredded carrots, shredded brocco-slaw in proportions that you like. I also add hearts of romaine and arugula or other greens depending on season and what I’m in the mood for. I also like to snip in lots of parsley, sometimes some watercress.
These are the basics that keep nicely as the foundation in the fridge- other things like tomatoes and cucumbers or whatever don’t do as well and should be added more last minute.
I make a LOT of salad in my large salad bowl. It’s usually enough for 3 meals or so. Then… my little trick… I wet some paper towel and cover the greens totally. I then add a teatowel/clean dishtowel on top of that.
Into the fridge until you need it.
I am a lover of one-bowl meals. Everything I eat tends to go on top of my “Foundational Salad”… hence the name. My protein and whatever else I’m eating just goes with the salad. I really LOVE chilli on top of salad (don’t judge me).
My aforementioned Emma is the one who told me this should be a blog post months ago… I often need coaxing as this seems so not particularly interesting, but if a big bowl of towel-covered salad in your fridge gets you to eat more greens with more ease then that will be a really good thing.
